Bean Burritos
Burritos can be filled with pretty much anything. These babies have rice, beans, cheese, and corn, and they are packed! What's more, they can be frozen. Let the freezer be your friend. Have a burrito tonight, and then one of those nights when you just feel like kicking back, pull some out of the freezer, bake them, and you're all set. If you're feeding a crowd, you might want to start off with some guacamole.
PREP: 1 hour
TOTAL: 1 hour

Reheating From Frozen
Microwave and Oven: Remove frozen burritos from plastic wrap. Place on a microwave-safe plate; microwave on high for 3 minutes. Transfer to baking sheet; bake at 450 degrees until crispy, about 10 minutes.
Microwave Only: Remove from plastic wrap, and place on a microwave-safe plate, covered with a microwave safe bowl. Defrost at high power for 3 to 4 minutes; uncover, and microwave on high 3 to 4 minutes longer.
Oven Only: remove burritos from plastic wrap; rewrap individually in aluminum foil. Place on a baking sheet; bake at 450 degrees, 40 minutes; remove foil, and bake to crisp, 5 to 10 minutes. (To reheat defrosted burritos, remove any wrapping and bake for 10 minutes).

What would be the reheating instructions from frozen? I'm still new to reheating foods straight from the freezer.

Yay
for a vegetarian dinner! I love everyday food, but I have to say I'm
consistently disappointed that there aren't more veggie friendly
recipes. Granted, each month I can count on at least one recipe, but
come on! There's a whole edition dedicated to chicken! Please, just
once, do a vegetarian edition! Being vegetarian isn't such an
"alternative" lifestyle any more! I signed up for the Dinner Tonight
newsletter hoping that there would be, like in the magazine, the
occasional vegetarian recipe. Boy is "occasional" the right word for
that one! With the high rates of heart disease, obesity, diabetes, and
other chronic health conditions plaguing Americans, eating just one
vegetarian meal a week (especially if it contains beans) can reduce
your risk. Please, please, please, try to have at least one- dare I say
two- vegetarian recipe a week in the Dinner Tonight newsletter! I would
like to be able to check my e-mail and, once each week, actually be
able to make that dinner tonight!

These
are one of my favorites! THank you everyday food. I just made these
last week and I still can't believe my picky eaters devour these and
not other "normal" kid foods. Well, I mean, these are great- that must
be why!
